I made blue rare bacon that I bought from the butcher, it was good and no issues 6 hours later. I have thought about raw, but haven't been drunk enough to try it at 6am LOLughh, way to many nasties in the mix, although my younger brother used to eat it raw right out of the package, it didn't kill him but he has a nasty twitch lol.
They have harvest thick at Sobey's, as well as Mitchels thick, which is a little cheaper than Harvest and just as goodThat looks great. MIght have to try that.
I like Harvest thick sliced. It is out of Yorkton, SK. Hard to find but sometimes it is in Costco.
