fish smoker?

Fishing season is soon apon us and I'm looking for some help. Has anyone tried building a fish smoker? Sure I could buy one, but what fun would that be. Anyone?:BBQ:

My barbecue can smoke food and cook on med or high.( A traeger Pellit Grill ), I have the black one,its awsome. I have seen people take those real old fridges and make into smokers too. Or you feel like a redneck today build one this way.

Buy a bradley smoke generator and bolt it to an old fridge



I have a Bradley smoker and it works great.

I'd like to take this thread one step further and try and bribe some of your secret fish smoking recipes out of you guy's. Lets hear some please. Oh and good idea summiteer on the smoke generator. I have an old freezer that I have been saving for building a smoker with but not really sure what to do with it.

Not a big fan of fish, just use it so far for pulled pork and smoked beef brisket. Hoping to do some hams and elk jerky this summer.

fish brine..........1 gal. cheep white zinfindel 1 cup salt 3 chopped onions and soak for 24 hours makes fer good smoked fish :D

Smoking recipe # 1
2 quarts of water
1 cup of coarse / kosher salt
1/2 cup of brown sugar
2 tbsp of lemon concentrate / or 1/4 cup of lemon juice
1 tsp of garlic powder
1/2 tsp of onion powder
2 tbsp of Montreal steak spice

Slab fillets, leave skin on, wash and soak in brine overnight.
smoke for 6 to 10 hours. Depends on the size of fillets. When meat starts to seperate, remove and let it sit and cool.... If you can wait that long.........

Smoking recipe #2
1/3 cup of sugar
1/4 cup of coarse or kosher salt
2 cups of dark soya sauce
1 cup of warm water
1/2 tsp of onion powder
1 tsp of garlic powder
1 tsp of pepper
1/2 tsp of tabasco sauce
1 cup of dry white wine

use fillets or nuggets, marinate overnight, rinse off and smoke till meat starts to seperate, 4 to 8 hours..

Years ago I used an old metal fridge. The one with the locking freezer door style handle an rounded top. I gutted it and made grates out of expanded mess, 8 of them I believe. I used a small cast iron pan for the smoker chips and a single hot plate element for the heat. Worked awesome, could never keep the fish long, to many friends that liked it.... seems like I was smoking every weekend...:d
