Is it ok when I add weight that the allan screws stick out? I want to weight it up for a flat land ride this weekend.

NO!! I had cutler adjustables and wondered the same thing. I barely had an 1/8 sticking out the toe and it jammed against the clutch. I bought 75/85 and there was no way I could jam 10 grams in there without some sticking out. Maybe I was doing something wrong but I tried everything, ended up buying heavier Dalton adjustables.
