Airport procedures for direct flight from Alberta to Mexico

With direct flights to Mexico, you are not "pre clearing customs" and only going through local CATSA screening. Screening lines can get backed up from about 600-800am and again 600-800pm as the bulk of the traffic is departing at 0700 and 1900.

Depending on the specific airline, they may have a check in cut off time. Most are 60 mins for international. So if you are driving to the airport, parking, getting to the terminal and haven't checked in online be at the terminal check in minimum 60 mins prior to departure for international flights. The International terminal in Calgary is also set up as a call to gate system now. It is intended that you do not proceed to your gate once you check in and wait around the main terminal area, post security for your boarding to be announced.

Just because "things" can happen I would attempt to give yourself 2 hours at the airport prior to departure time. 3 is a little excessive if you are already in town. Once at the airport the difference between 90 mins and 120 is almost non existent. Especially if you are travelling with any children.
