What does a guy gain by changing the gearing in these sleds? Is it gonna affect me at all when I'm flatland ditch banging at home? Clutch and weight changes required? I have dalton adjustable weights and a can, otherwise bone stock '15 Kincaid edition.

Honestly unless you're bored, I wouldn't bother (coming from a fellow sasky). I put a 20 top tooth in my '13 but mainly cause I had the gear and I was bored so I threw it in.

The gearing on the 14's and 15's is a tad low @ 19/50 (2.63:1), and doesn't load the engine enough IMHO. I'd go 20/49, which equates to a 2.42:1 ratio. Works great in the mountains, and you'd have a bit more top end if riding locally.

Does a guy need to change anything else or just the gearing? I've seen some people claim it helps the clutches stay a little cooler and might give a guy a bit more belt life.

Clutching would require some changes. More weight, lighter spring. To be fair, a good clutch setup at elevation isn't going to work very well for flatland riding, it will tend to over rev.
