Breakfast time! ... so I eat a pretty low carb - high protein diet, so my breakfasts usually require a little creativity, yet simplicity for convenience, as I don't eat breakfast cereals (except for plain oatmeal with berries), or breads, etc.
Most of my breakfasts are usually pretty easy like fruit smoothies, or yogurt and berries with the Holy Crap gluten-free Dragon's Blend artisan cereal.. but when I have some time in the evenings I whip up some of these for breakfast...
Mini Omelletes..pretty simple, grab a muffin baking tray.. I use 2 eggs, some spinach, bell peppers, cheese, mushrooms and whatever else is in the fridge, mix it all up and pour about 3/4 full into the muffin trays, bake in the oven until they start to bubble up and look cooked, and voila.. breakfast
I bought a muffin tray and made these this weekend. Delicious. Going to have some for breakfast at work this morning!
