Breakfast time! ... so I eat a pretty low carb - high protein diet, so my breakfasts usually require a little creativity, yet simplicity for convenience, as I don't eat breakfast cereals (except for plain oatmeal with berries), or breads, etc.

Most of my breakfasts are usually pretty easy like fruit smoothies, or yogurt and berries with the Holy Crap gluten-free Dragon's Blend artisan cereal.. but when I have some time in the evenings I whip up some of these for breakfast...

Mini Omelletes..pretty simple, grab a muffin baking tray.. I use 2 eggs, some spinach, bell peppers, cheese, mushrooms and whatever else is in the fridge, mix it all up and pour about 3/4 full into the muffin trays, bake in the oven until they start to bubble up and look cooked, and voila.. breakfast :)

I bought a muffin tray and made these this weekend. Delicious. Going to have some for breakfast at work this morning! :D

and another simple, low carb breakfast on the menu this morning..

Your favorite yogurt, mixed with some fruit (strawberries, blueberries, banana, or whatever you like..), tsp of hemp hearts, and a tsp of Holy Crap Dragon's Blend Artisan cereal and some almonds.

Well.. since it was gorgeous evening yesterday I decided to whip up a little BBQ dinner for myself..

Some BBQ'd vegetables and Beer-Honey-Lime chicken..




Pretty simple stuff.. for the veggies, I threw together a whackload of vegetables I had in the fridge ( red and orange bell pepper, asparagus, mushrooms, celery, carrots, red, orange and yellow cherry tomatoes halved, and some red onion)
placed them in some tin foil, in a small bowl mixed together a minced garlic glove, salt, pepper, a little splash of olive oil, red wine vinegar and lemon juice and drizzle over the veggies, seal it up and throw on the BBQ on about medium heat for 10 minutes. Dont over do the lemon juice or vinegar, really just need a touch, and don't overcook or they will get too mushy.

Chicken.. place chicken in a bowl, in another bowl mix together approx 1 can of beer of your choice, about a tbsp of honey, fresh squeezed lime juice from one lime or bottled stuff, 2 gloves of garlic minced, some salt and pepper, and if you have about 2 tbsp of some fresh herbs like cilantro..I didn't have it so I just mixed in dry parsely. Mix the marinade together until honey dissolves and its well blended.. Pour over the chicken and marinade in the fridge for 20-30 mins tops. Dont marinate chicken too long in anything citrusy..cook chicken to your liking on the BBQ.

Lastnight I decided to whip up a batch of beef and cabbage soup.. very high protein and low carb..

It tastes a lot better than it looks lol.

I skipped the whole fat part, and I just buy some regular chunks of beef and cut up into little cubes.. and cook everything with some olive oil and a bit of butter.. also, I use turkey bacon, and not the fake turkey bacon..but the healthier and yummier Lilydale turkey bacon.. Sweet potato with turkey bacon and blue cheese appetizers..

couple sweet potatoes, cut up in about 1/4" thick rounds (leave skin on), toss lightly with some olive oil and seasoning ( I use garlic salt, cracked pepper, paprika, thyme) bake in the oven for about 20-25 mins on 425, or until slightly browned and soft. Take out and top with chopped peices of cooked turkey bacon and crumbled blue cheese, set broiler to low and put on bottom rack until blue cheese starts to slightly bubble and cook and voila.. healthy, tasty appy!

I'm bringing this dish, along with some lime jello shooters with Mountain Dew flavoured vodka to girls night tonight ;)

I also bought quite a few sweet potatoes, more than I needed for these, so I ended up using the other sweet potatoes to make shepherds pie with sweet potatoes instead of regular potatoes. It was quite good as well. Sweet potatoes are much healthier than regular potatoes and make a good substitute for them.

Mmmmmm!!!!!

I never took pictures of the supper I made on Sunday - but we had Roast Chicken, Mashed Potatoes, Carrots, Steamed Green Beans... And Dill Pasta Salad.
For dessert Homemade New York Style Cheesecake with Mixed Berry Sauce cooked from scratch.

Mm-mmmmmn!!!!!

The Food Chronicles... I thought this section of the site was about horse power and honey's.:d Defeats the purpose of honey's and horse power (and snow and mud).:rolleyes:

You are kidding right? A true Horsepower Hunny knows her way around the kitchen... gotta nourish the "machine" so we can rip it up like the big boys, NO??? Haven't you ever heard the saying, "you must be a maid in the living room, a cook in the kitchen and a whore in the bedroom"? Its kinda like that, with sleds and two-stroke smoke inserted where appropriate :)

I had two guys approach me and another girl on Renshaw in McBride this winter and he says, "Hey, all those guys over there want to know if you two are riding by yourselves?" My response: "Oh yes... why wouldn't we be?" So then he says something about our husbands letting us out alone, to which I replied, "Don't worry, I'm barefoot in my KLIM boots, and my kitchen is the muff pot under the Cat hood :eek:!!! ". He just grinned really big and asked if it was possible I had younger sister... It was cute :beer:

I made this one over a week ago and I'm just posting it now. I try to follow a low carb diet and after seeing ladydirt post her sweet potatoe cooking a while back I decided to make this recipe as I have many times before but this time with sweet potatoes. I also use a Porter beer instead of Guinness. ( I really don't like Guinness) It turned out awesome. I also halfed the recipe as I was only cooking for two.

Guinness Shepherds Pie

By The Hungry Housewife
1 ½ pounds Organic ground beef 80/20
1 (1lb) bag frozen mixed vegetables, thawed
2 packets of dry Brown Gravy Mix
1 medium onion
Olive Oil
2 bottles Guinness Beer
2 Tablespoons Tomato Paste
2 cups Sharp Cheddar Cheese
3 pounds baking potatoes
¼- ½ cup milk
1 stick butter
Salt and pepper

Preheat oven to 375

To make Potato filling…
Boil the potatoes in slated water until fork tender. Drain completely and place back in pot so all of the water evaporates.
In a medium mixing bowl add butter and potatoes. Mash until smooth, while adding the milk for a medium consistency. Add salt and pepper.

Meat filling…
Cook and drain ground beef.
Place drained beef back in skillet and add 1 bottle of Guinness. Cook until beer has almost cooked out.
Add tomato paste to meat
In a medium sauce pan, prepare the brown gravy according to package directions,
however, use beer for half the liquid called for( 1 cup water, 1 cup beer)
Pour gravy into meat mixture. And cook all together until you get a nice thick gravy.

In medium skillet with olive oil sauté onions until soft and translucent.
Add mixed vegetables to the onions and cook until warm throughout.

In a 2 quart baking dish, add meat as bottom layer, the add vegetables, and then add the mashed potatoes. Top with Shredded cheese.Cook at 375 for about 20 minutes or until cheese in nice and bubbly
