I have started making changes to my 04 900. I have added a can, V-Force reeds opened up the airbox and added a fresh air kit. How do I jet for these changes? I am experiencing an issue at idle. It starts great with the choke, warms up and then runs great. When I stop moving the engine will run on high idle. I have found that if I apply the choke the idle will come down to a normal range and stay there till I apply the throttle again.

I have checked the plugs and they are a light caramel color.

Do I need to re-jet? How much? What Jets do I need to change?

sounds like a lean condition low-mid range. you could add some fuel via the fuel screw(with white knob) 1/2 turn at a time counterclockwise. see if helps, and or less air with air screw 1/4 clockwise at a time.
common issue with these carbs.
