Just bought Billet Wheels for my 155inch sled, and they seem to fit quite larger than the stock ones. Due to the larger wheel size, does it make a difference if the track doesn't ride on the sliders for the last foot on the end of the rail?

I know a freind of mine extended the track on a old 650 wild cat and the rails are about 8-10 inches from the end of his track ,he has been riding it for 3 years like that with no track issues to date

No. It will have less friction on the sliders which is a benefit.
