So after being pulled out of the water I sunk in (about 3ft) by a truck.. my skis are toe'd in...with the bars straight, i can get the one side straigh with 3-4 threads on the tierod left. On the other side.. with the tie rod screwed all teh way in i still have a fair amount of toe in. I cannot see anything visibly bent. What should I be looking for / to adjust from here?

if it's a older sled you can remove the piece thats attached to the spindle it has splines so you can turn it to the space you need if it's newer you twisted the one piece spindle

No splines on the spindle ( welded solid to the arm on top[ ). Check if the a arms are bent - If the A arms are good ( not bent ) then it might be cheaper to grind or torch off the arm off the spindle and re weld ( re paint )
