My father inlaw had the same issue on his 500ho. Apparently there are two temp sensors and it was the one you can't see that was giving the problem. I believe it's in or around the rad somewhere. The one on the engine that was fairly easy to access wasn't the problem.

Depends where you live. I know back home in Newfoundland is is illegal to ride with a passenger and the penalties are hefty for doing so. I would check with local authorities. Here in Alberta there's no law against it, but that doesn't mean it's fine in Manitoba, better to check and be sure.
