Slow on a low heat and it ends up very tender.

Slow but sure Doug. Two flare ups of gout have set back the physical exercise part a lot. But I'm down 15+ pounds now.

Homemade meat balls with regular hamburger, melted butter, shredded cheese, and many spices. So much better than the dry oven cooked ones!!

I've cooked a few cookie sheets on the q , 2 butterflied chickens on a cooling rack over a cookie sheet fit purrfect.
Cook it hot enough to smoke the fat and no flare ups. Sauce them at the end of the cook, like 30 min total.

Pork shoulder last night at 2am and sitting at 140 9 hours later. Slowly getting there haha
