How do you unhook the throttle cables from the carbs so you can change them out for longer ones ?

Its been a while since I worked on one of those...lol
If I remember correctly you will have to unscrew the tops of the carbs because the cables
are connected directly to the slides...
At least i think thats how it is,,, like I said its been a while,,, Flip up the hood and have a look.
This isnt complicated stuff here....

I was stealing more towards the cable that runs under the motor I assume oil injection.

Can you just use a throttle cable extension ?

If the carbs are the same as the 2002's you shouldn't have to take the carb apart. I believe you just have to unhook the cable from the linkage between the two carbs. Then you will have to unhook the other part of the cable from the oil pump... I used the powermadd throttle cable extension on mine. Its easy to hook up and worked good.
