I got a brisket from a farmer that said the cow was 18months old. It about 10 lbs and extremely lean, no fat to trim.
Now im wondering about cook times? I usually get up at 4 to put one on. Now im wondering.

When it is done, wrap it in a towel and throw it in a cooler. Should be good up to 6 hours. Buddy brought one from edmonton to calgary once and we ate it 2 hours later and it was still too hot to hold your hand on.

Temperature is key. 203 °.
Wrap it in 2 or 3 towels and put in cooler. Will be good if done too early

I did one for a bunch of customers. Cooked day before and then put in slow cookers next morning... just as good as day of cooking
