For today's brisket the rub is: 1/4 cup paprika, 3 tbsp maple sugar, 2 tbsp kosher salt, 1 tbsp black pepper, 1 tbsp onion powder, 1 tsp cumin, 1 tsp cayenne pepper
The meat was injected with a brine consisting of: beef broth, worcestershire, viniger, hot sauce, lemon juice, sea salt, onion powder, garlic salt, cayenne pepper. The mixer was brought to a boil on the stove and once cooled injected into the meat and left to sit in the fridge for 12 hrs before applying the dry rub.
Might be copying this one. Only done one brisket so far and my controller messed up. Was still good but not what it should be

So smoked them for 50 minutes at 250F then seared for 2 minutes a side. Wow. Steak was so juicy and I even over cooked them a bit. Will try lower heat next time I think, but for the first go I’m so impressed.

I'm doing my second brisket this weekend. Will try and remember to get pics. Last one was @#$king amazing. Was a 10 lb brisket. Picked up an 18 lb today. Maybe with any luck there will be a bit of left overs.
