Doug,
Heres the one I use.
Sometimes we add raisins also. Freeze them up and they keep longer.
Enjoy! Bet you cannot eat just one. LOL!

Ingredients

  • 1 cup oats
  • ⅔ cup toasted shredded coconut
  • ½ cup peanut butter
  • ½ cup mini chocolate chips
  • ⅓ cup honey
  • 1 tsp vanilla

Instructions

  1. Combine all ingredients in a large bowl.
  2. Roll and compress the mixture into 1 inch rounds and place on parchment paper
  3. Refrigerate a few minutes until firm and then transfer to an air tight container.
  4. Refrigerate and enjoy for up to one week.

I found a few variations and that one of yours is one of the Google variations. The one we had was just 3/4 cup peanut butter, 1/4 cup honey, 1/2 cup raw oats, and a scoop of flavoured protein powder. I'm guessing it is sort of like cooker recipes; the basics of peanut butter, honey, and oats and whatever else the imagination brings forth.

Thanks for the reply.
